AUNT ALICE'S BAKED CUSTARD 
3 slightly beaten eggs
1/4 c. sugar
1/4 tsp. salt
2 c. milk, scalded
1/2 tsp. vanilla
nutmeg

Combine eggs, sugar and salt. Slowly add scalded milk and vanilla. Pour into a baking dish or custard cups; sprinkle with nutmeg.

Bake in pan of hot water in 350°F oven until mixture doesn't adhere to knife, about 30 to 40 minutes. Serve warm, or chill and serve cold.

Maple Sauce:

1 c. brown sugar
1 tbsp. flour
dash of salt
1/2 c. water
1 tsp. butter

For maple custard, omit nutmeg and serve with Maple Sauce. Cook ingredients until thick, stirring constantly. Cool and add few drops of maple flavoring. The Jollief family recall with such fond memories of Aunt Alice preparing and bringing baked custard to them when they were ill. At this writing, Aunt Alice Jollief is 102 years old. She still has a sharp mind. Just a year ago she left her apartment and now resides in a care facility in Clinton, IN.
