VEGETABLE BEEF CASSEROLE | |
1 lb. ground beef 2 tbsp. chopped onion 5 med. potatoes, peeled and sliced 1/2 c. sliced mushrooms 1 (10 oz.) can vegetable beef soup 3/4 c. water 1 tsp. salt 1 (3 oz.) can French fried onion rings Preheat oven to 350 degrees. Crumble ground beef with onion in skillet. Brown over medium heat; drain. Combine all ingredients except onion rings in 12x8-inch baking pan. Cover. Bake for 30 minutes. Stir. Bake uncovered 1 hour, or until potatoes are tender. Sprinkle onion rings over top of casserole. Bake 5 minutes. Serves 4-6. |
