FETTUCINI WITH PEPPER SAUCE 
1 1/2 c. broccoli florets
1 med. pepper (or a mix of colors) cut into strips
1 med. onion, chopped
1 tbsp. oil
1 can cream chicken soup
5 or 6 boneless chicken breasts, cubed
1/2 c. water
1/2 c. each, shredded cheddar, Mozzarella
1 tsp. dried basil
8 oz. pasta, cooked

Stir fry broccoli, onion, and pepper in oil for 4 to 5 minutes. Remove. Stir fry chicken pieces until no longer pink. Add soup, water, and basil. Mix thoroughly and stir in pepper mixture. Bring to a boil, reduce heat and add cheese. Stir until melted. Serve over hot, cooked pasta.
