PUMPKIN NUT LOAF 
1 c. shortening
2 3/4 c. sugar
3 eggs
3 c. all purpose flour
1 tbsp. pumpkin pie spice
1 tsp. baking powder
1 tsp. baking soda
1 (1 lb.) can pumpkin
1 tsp. vanilla
1 c. chopped nuts

Beat shortening until fluffy. Add sugar gradually. Beat in eggs. Blend together flour, spices, bakin gpowder, baking soda and salt. Stir into sugar mixture. Add pumpkin and vanilla. Mix well and fold in nuts. Bake in 2 loaf pans (may use tall juice cans which have been greased and floured). Bake for 1 hour at 350 degrees.
