GARY'S FISH CHOWDER 
1 lb. haddock, cod or other white fish
1 c. cold water
1/4 lb. bacon, diced
6 sm. potatoes, peeled & diced
2 onions, chopped
2 c. boiling water
1 pt. milk
3 tsp. Old Bay seasonings
1 tbsp. flour
Salt
Paprika

Add cold water to fish. Heat to simmer. Cook gently 10 minutes. Remove fish, reserving water. Skin the fish, return to cooking water. In a deep, heavy kettle, fry bacon. Drain the grease and discard. Add potatoes, onions and boiling water. Cover and cook 10 minutes. Add fish and fish stock. Simmer 5 minutes. Stir in a mixture of flour, Old Bay Seasonings and milk; bring to a boil. Add butter, salt and paprika to taste.
