6 (6 oz.) bars milk chocolate, cut into tiny bits 3 tsp. pure vanilla extract 2 cans sweetened condensed milk 24 lg. marshmallows, cut into thirds 1 c. sm. pecan halves, set few aside to decorate Melt cut-up chocolate in upper part of double boiler, over boiling water. Stir occasionally. After 20 to 25 minutes remove boiler from heating surface. Beat chocolate with a wooden spoon, or an electric mixer, until smooth and glossy. Immediately, add vanilla and condensed milk, all at once time, to melted chocolate - beat with a wooden spoon until well blended. Spread one-half of chocolate mixture into wax-paper-lined 9 x 9 inch pan. Cover this layer with the cut-up marshmallows, leaving space between pieces, for pecans and so top layer of chocolate can flow into the spaces. Sprinkle pecans over marshmallows. Pour the other half of chocolate, slowly and evenly, over marshmallow layer - cover completely. Decorate the top with pecan halves, placed flat side down, adding that special finish to the candy. Let cool about 2 hours or until firm to touch. Turn out onto cutting board, remove wax paper, turn over. Score top into bars, 3/4 x 1 1/2 inches, cut with heavy knife. Store in wax-paper-lined box. Keep in cool place. |
