FRENCH ONION SOUP 
2 lg. Spanish onions
7 c. water
7 beef flavor bouillon cubes or beef broth
3 or 4 tbsp. butter
3/4 tsp. minced garlic
Salt and pepper to taste
Toasted bread cubes

GARNISH:

Swiss cheese slices
Parmesan cheese

Separate onions into rings and gently saute in butter until light brown and tender. Add garlic, salt and pepper when tender. Add hot broth and simmer 15 minutes. Put toasted cubes in bottom of bowls and add soup. Garnish top of soup generously with Parmesan cheese and Swiss cheese slices. Put in hot oven, 475 degrees, until cheese melts. Serve immediately. Approximately 2 quarts soup.
