BEV'S PANCAKES 
1 1/4 c. flour
3 tsp. baking powder
1 tbsp. sugar
1/2 tsp. salt
1 beaten egg
1 c. milk
2 tbsp. salad oil or melted shortening

Sift together flour, baking powder, sugar, and salt. Combine egg, milk, and salad oil; add to dry ingredients, stirring just until flour is moistened. Batter will be a little lumpy. Bake on hot griddle. Makes 8 (4 inch) pancakes.

VARIATIONS:

For buttermilk pancakes, substitute buttermilk or sour milk for sweet milk. Add 1/2 teaspoon baking soda and cut baking powder to 2 teaspoons.
