FRIED RICE | |
2 tbsp. oil 1/4 c. green onions, chopped 1 garlic clove, minced 3 c. cold cooked rice 3 tbsp. soy sauce 2 eggs, beaten 1/8 tsp. pepper 1/2 to 1 c. fresh bean sprouts 1/3 c. frozen peas, thawed 1/2 to 1 c. chicken, pork, beef of shrimp, cooked, diced (can be stirred into rice) In large skillet, heat oil; cook onions and garlic until tender. Stir in rice and soy sauce. Cook over low heat 5 to 10 minutes, stirring occasionally with fork. Push rice mixture to side of skillet; add eggs and pepper. Cook over low heat 5 minutes, stirring occasionally. Add bean sprouts and peas to rice and egg mixture; stir to combine. Add meat if desired. Cook until thoroughly heated. Serve with additional soy sauce, if desired. Makes 4 (1 cup) servings. |
