TEXAS STYLE MEAT LOAF 
2 1/2 lb. lean ground beef
1 medium onion, chopped
1 medium bell pepper, chopped
5 pieces bread or toast, torn in small pieces
2 eggs
1 c. Ro-Tel tomatoes
jalapenos (optional)

Mix all ingredients in a large bowl. Cook at 250°F for 1 1/2 to 2 hours. Before the 2 hours are up, add tortilla chips and cheese on top. Put in broiler for about 6 to 8 minutes or until cheese is melted. Velveeta or Monterey Jack is best.
