LENTIL CASSEROLE 
1 c. lentils
2 c. water
1 c. chopped tomatoes
1 green pepper, chopped
1 clove garlic, minced
1 tsp. chili powder
Dash of cayenne pepper

Bring lentils and water to a boil in saucepan. Reduce heat and simmer for 1 to 1 1/2 hours until tender. Add tomatoes, onion, garlic, chili powder, and cayenne. Place in a baking dish and bake, covered, for 20 minutes at 350 degrees. Serves 4 to 6.
