4 med. or 6 sm. green peppers Cut off tops, seed, and blanch in boiling water 3-4 minutes. Drain. STUFFING: 2 cloves garlic 1 med. onion 3/4 lb. lean ground beef 1 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. thyme 1 bay leaf 1/2 c. chopped tomato pulp 1 c. cooked rice 2 tbsp. pine nuts 2 tbsp. raisins 1/2 c. chopped parsley Saute garlic and onion and ground beef. Add oil, if needed. Add salt, pepper, thyme, bay leaf, and tomato pulp and cook 2-3 minutes. Add rice, pine nuts, raisins, and parsley and mix. Correct seasonings. Remove bay leaf. Stuff peppers and place in oiled baking dish. Drizzle with oil and bake at 350 degrees for 25-30 minutes. |
