FRIED OKRA 
1 1/2 to 1 3/4 lb. okra
3 qt. water
3/4 c. salt
Cornmeal
Salad oil

Wash okra well; drain. Cut off tip and stem ends; cut okra crosswise into 1/2 inch slices. Combine water and salt; pour over okra. Soak 30 minutes; drain, rinse well, and drain again. Roll okra in cornmeal, and fry in hot oil until golden brown. Drain on absorbent towels. Yield: 8 to 10 servings.
