GREEK SPINACH PIE 
1 lb. Ricotta cheese
1 (10 oz.) pkg. spinach, thawed and drained, or 1 pkg. fresh, steamed and drained
1 c. (4 oz.) Feta cheese
3 eggs, lightly beaten
2 tbsp. vegetable oil
1/2 tsp. salt
Black pepper to taste
1/8 tsp. garlic powder

Combine all ingredients; blend well. Turn into greased pie plate. Bake at 350 degrees for 30-40 minutes, or until a knife inserted into the center comes out clean.
