STUFFED MEAT LOAF 
1/2 c. butter
1/2 c. diced celery
1/2 c. water
1 egg
4 tbsp. fine bread crumbs
2/3 c. evaporated milk
1/2 c. minced onion
6 slices toast, cubed
1/2 tsp. poultry seasonings
1 lb. lean ground beef
1 tsp. salt
Pepper to taste

Saute onion and celery in butter until onion is tender but not brown. In medium bowl combine bread crumbs and water. Add butter mixture, seasonings and egg. Mix lightly but well.

In another bowl, combine beef bread crumbs, salt and evaporated milk. Mix lightly but well. Set aside 3/4 cup of beef mixture. Pat remaining beef mixture over bottom and side of 1 1/2 quart loaf pan. Fill center of loaf with bread stuffing, and spread the reserved meat mixture over stuffing. Bake at 325 degrees for 1 hour and 15 minutes. Let stand in pan 10 minutes before serving. Serves 4.
