PUMPKIN BREAD WITH CHOCOLATE CHIPS | |
2 c. sugar 2 eggs 1 c. canned pumpkin 1/2 c. oil 2 1/2 c. flour 1 1/2 tsp. baking soda 1 1/2 tsp. pumpkin pie spice 1 tsp. cinnamon 1/2 orange, grated (use fruit, juice & peel) (remove any large membrane) 1 apple, peeled, cored & grated 2/3 c. chocolate chips Beat together the first 4 ingredients until well blended. Stir in the remaining ingredients until dry ingredients are just moistened. Do not overmix. Grease and flour 2 loaf pans or spray with Pam. Divide mixture between the 2 pans. Bake at 325 degrees for 45 to 50 minutes, or until toothpick comes out clean. Cool 15 minutes and remove from pans. This can also be divided into 4 mini loaf pans. Great gift idea for the holidays. |
