2 lbs. ground turkey 2 lbs. Italian sausage, casings removed 2 eggs 1 1/2 to 2 c. seasoned bread crumbs (Progresso) 1 c. shallots and cilantro, chopped fine Saute shallots and cilantro in Mazola oil. Remove from skillet and combine with meat mixture. Shape like cutlets and brown in the same skillet. Remove and place side by side in an oblong pan. Cover loosely with foil and bake about 40 minutes to insure doneness. Place on platter and garnish with Peperoncini. You may have to add a little oil when you brown the meat mixture, because the turkey may be dry. Use your own discretion. |
