CORNISH HENS WITH CHERRY SAUCE | |
10 "Oven Express" Cornish hen halves Salt & pepper 3 tbsp. butter 1 med. onion, chopped 1 c. cherry preserves 1/2 c. tomato juice 1/4 c. soy 3 tbsp. brown sugar 1/2 tsp. dry mustard 1 tbsp. lemon juice Season hens with salt and pepper. In a medium saucepan, melt butter and saute onion. Add remaining ingredients and heat until preserves melt, bringing to a boil. Arrange hens in baking pan and pour sauce over hens. Bake for 35 to 45 minutes at 350 degrees, basting frequently. Serve over rice. Spoon sauce over hens |
