MOCK CUTLETS 
1 lbs. ground turkey
2 lbs. bulk Italian sausage
2 eggs
1 1/2 to 2 c. seasoned bread crumbs
1 c. shallots and cilantro, chopped fine

Saute shallots and cilantro in oil. Remove from skillet and combine with meat. Add eggs and bread crumbs. Shape like cutlets and brown in skillet that you used to saute shallots and cilantro. Remove and place side by side in oblong pan. Cover with foil loosely and bake about 40 minutes to insure doneness. Place on patter and garnish with peperoncini. You may have to add a little oil when you brown the meat mixture because turkey may be dry.
