MISSISSIPPI CAVIAR 
2 (14 oz.) cans black-eyed peas, drained
1 (15 1/2 oz.) can while hominy, drained
2 med. tomatoes, chopped
4 green onions, chopped
2 cloves garlic, minced
1 med. bell pepper, chopped
1 jalapeno pepper, chopped
1/2 c. onion, chopped
1/2 c. fresh parsley, chopped
1 (8 oz.) bottle Italian salad dressing

Combine all ingredients and marinate at least 2 hours. Serve as a salad or with tortilla chips as a dip.
