CAROLINA CAVIAR 
Great with corn chips or in pita halves or just as a side dish!

1 (14 oz.) can Hoppin' John (which is just black-eyed peas, tomato and jalapeno)
2 (15 oz. ea.) cans black-eyed peas
1 (10 oz.) jar sliced green olives with pimento
1 medium tomato, seeded and chopped
1 medium green bell pepper, seeded and chopped
1 small Vidalia onion finely, chopped (can also use red or green onions if you prefer)
1 tbsp. sugar

It's not necessary to drain the Hoppin' John but DO drain the black-eyed peas and olives. Assemble with the chopped vegetables and serve chilled.
