SEAFOOD SALAD 
1 c. white rice
1 lb. sm. shrimp
1 lb. crabmeat substitute
2 stalks celery, diced
1 red pepper, diced
1 green pepper, diced
1 red onion, diced
1 can black olives, sliced
8 oz. bottle Italian dressing
Salt
Pepper

Cook rice according to directions. Rinse in cold water, drain well. Combine rice and all the above ingredients and mix well. Add Italian dressing to taste. Salt and pepper to taste. Serves 8 to 12.
