COUNTRY PINEAPPLE CASSEROLE 
1/2 c. butter, softened
2 c. sugar
8 eggs
2 cans pineapple, crushed and drained
3 tbsp. lemon juice
10 slices white bread (day old), cubed

In a mixing bowl, cream butter and sugar. Add eggs one at a time, beating well after each addition. Stir in pineapple juice and lemon juice. Fold in bread cubes. Pour into a greased 13 x 9 x 2-inch baking dish.

Bake, uncovered, at 325°F for 35 to 40 minutes or until set.

Yield: 12 to 16 servings.
