EASY CARAMEL CORN 
5 qts. popcorn (4 batches hot air)
2 c. brown sugar
1 c. butter
1/2 c. white Karo syrup
2 tsp. vanilla
1 tsp. butter extract
1/2 tsp. baking soda
2 c. peanuts

In a small saucepan, melt butter. Stir in brown sugar and Karo syrup. Bring to a full boil. Remove from heat. Add vanilla extract, butter extract and baking soda. Mixture will be foamy. Put popcorn and peanuts in a large roasting pan. (A turkey roaster works well.) Pour mixture over popcorn and peanuts. Stir thoroughly with wooden spoon. Bake in 200 degree oven, stirring every 15 to 20 minutes for about 2 hours or until dry. Remove from oven, stir again and allow to cool. Store in airtight containers or zip-lock bags. Yummy!
