HOLIDAY PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon extract
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. nutmeg
1 1/2 tsp. salt

Beat 3 eggs for 5 minutes. Add 1 cup sugar, pumpkin, lemon extract and mix with flour, baking powder, cinnamon and ginger, nutmeg and salt. Bake in a greased and floured jelly roll pan in a 350 degree oven for about 15 minutes. Roll and cool on a clean towel dusted with 10X sugar and 1 1/2 cups chopped walnuts. Fill with 1 cup 10X sugar, 6 ounces cream cheese, 4 tablespoons butter, and 1 teaspoon vanilla. Beat until soft.
