DIEBETIC VEGETABLE SALAD 
1 can white corn, whole kernal; drained
1 can peas; drained
1 can french cut green beans; drained
1 c. chopped celery
1 c. chopped onion
1 lg. green pepper; chopped

MARINADE:

1 tbsp. sugar sub.
3/4 c. vinegar
1 tsp. salt
1 tsp. pepper
1/3 c. oil
1 tsp. water

Mix; bring to a boil. Let cool. Pour over vegetables; let stand over night. Stir occasionaly.
