TAPIOCA SALAD 
1/2 c. plus 1 tbsp. Minute tapioca
1 sm. pkg. instant vanilla pudding
1 sm. pkg. orange gelatin
2 cans mandarin oranges, drained
1 sm. can pineapple chunks, drained
1 (9 oz.) container Cool Whip
12 maraschino cherries, chopped

In large bowl, pour tapioca, vanilla pudding mix and gelatin. Mix well. Boil 3 cups water and pour over mixture. Let set 3 minutes. Add fruits and Cool Whip, mixing well. Spoon into large glass bowl and refrigerate. Serve cold garnished with nuts and more Cool Whip, if desired. This is a very unusual textured fruit salad.
