EASY ENCHILADAS | |
1 can Hormel chilies, no beans 1 pkg. sm. or med. flour tortillas, will probably use about 8 2 c. shredded co-jack cheese 1 onion, finely chopped Warm chili in pan large enough to accommodate a tortilla. One at a time, soften tortilla in chili, flipping to coat both sides. Fill tortilla with some cheese and onions. Roll up and place side by side in rectangular baking dish. Pour remaining cheese and onions over top. Heat uncovered at 350 degrees for about 30 minutes, until bubbly. NOTE: Quantity of cheese and onion can be adjusted to suit personal tastes. Great with sour cream (or plain yogurt), salsa, and/or guacamole. Can keep ingredients on hand for last minute. Use and don't tell your guests about the canned chili - they'll never guess. |
