EASY ENCHILADAS RECIPE 
1 bag Fritos or generic equivalent
8-12 oz. American cheese, sliced or grated
1 can chile con carne & beans
1 can enchilada sauce (hot or mild, to taste)
1/2 - 1 lb. ground beef, browned
1 extra can kidney beans (opt.)
1 (2 qt.) baking dish

Set oven at 400 degrees. Brown beef; add canned ingredients and warm through. Layer casserole dish, greased, in this order: Fritos, meat/bean mixture with sauce, cheese, ending with cheese. Heat through in 400 degree oven until bubbly, 20 minutes and cheese is melted on top. Serve with a green salad.

This recipe can be doubled, tripled. Excellent made ahead and frozen. Great warmed up.
