SATE 
1 1/2-2 lbs. pork tenderloin
1/4 c. butter
1 tbsp. lemon juice
1/2 tsp. Tabasco
3 tsp. brown sugar
1 tsp. coriander
1/2 tsp. ground cumin
1/4 tsp. ginger
3-4 cloves garlic, crushed
1/2 c. soy sauce
Wooden skewers (soak in water 10-15 minutes)

Melt butter in 10 x 13 inch pan and add remaining ingredients. Bring to a boil and simmer 5 minutes or melt butter in pan. Add ingredients and transfer to 10 x 13 inch pan. Add pork tenderloin which has been cut into 3/4 inch cubes.

Cover and marinate overnight in refrigerator. Put 5-6 pieces on each skewer. Grill on barbeque for 15 minutes or until done (don't overcook).

Serves 6-8. Marinade can be reheated or served with Peanut Sauce.

PEANUT SAUCE:

1/4 c. peanut butter
2 tsp. curry powder
1/2 tsp. ground pepper
4 tbsp. lemon juice
1 tbsp. peanut oil
1 tbsp. brown sugar
3 tbsp. soy sauce
2 tbsp. minced ginger
3 lg. cloves garlic
1/2 tsp. Tabasco sauce

Mix together and heat. Serve with Sate.
