PASTA PRIMAVERA | |
1 lb. spaghetti or other pasta 2 tsp. oil 1 med. onion, chopped 1 sweet red pepper, seeded and chopped 1 sm. zucchini, sliced 1 sm. yellow squash, sliced 2 cloves garlic 1/2 tsp. minced ginger root 1/4 lb. mushrooms, sliced 1 pt. cherry tomatoes 1 c. snow peas 1/3 c. scallions 1/4 c. minced parsley 1 1/2 tbsp. soy sauce 1 tsp. sesame oil 1/4 tsp. hot sesame oil (optional) Cook pasta for 10 minutes; meanwhile heat oil in large fry pan. Add onion, pepper, zucchini, squash, garlic and ginger. Saute about 4 minutes or until vegetables are crisp-tender. Then add mushrooms, tomatoes, snow peas, scallions and parsley. Cook about 3 minutes more. Drain pasta, toss with vegetables, soy sauce, sesame oil and hot sesame oil. |
