HEAVENLY COCONUT CAKE 
1 box white cake mix
3 eggs, separated
1 stick butter, softened
1 c. buttermilk
1/2 tsp. baking soda
1 tsp. vanilla
1 c. coconut
1/2 c. chopped pecans

Mix together egg yolks, cake mix, butter and buttermilk in which baking soda has been dissolved, vanilla and coconut in mixing bowl. Beat until well blended. Beat egg whites until stiff. Fold pecans in cake mixture and then egg whites. Bake at 350 degrees for 30 to 35 minutes. Bake in layer pans and frost with favorite cream cheese frosting.

This makes a very large cake, very moist.
