EASY ZUCCHINI BREAD 
1/2 cup (1 stick) butter
1 cup sugar
2 eggs
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 cups zucchini (grated and strained)
1/2 cup dairy sour cream
1 tsp. cinnamon

Preheat oven to 350°F.

Cream sugar and butter together, then mix in eggs and vanilla.

In a separate bowl mix together flour, baking soda and salt. Slowly add the flour mixture to the rest. Stir in the zucchini, dairy sour cream and cinnamon. Pour in to two greased/sprayed loaf pans.

Bake at 350°F for 40 to 50 minutes or until a toothpick comes out clean.

Note: I used light Country Crock and fat-free sour cream and it still turned out lovely.
