CRACKED, GINGER COOKIES 
2 c. sugar
1 c. butter
2 eggs
1/2 c. light molasses
4 tsp. baking soda
1 tsp. salt
2 tsp. ground ginger
2 tsp. ground cinnamon
4 c. flour

Mix together dry ingredients (soda, salt, ginger, cinnamon and flour); set aside. Cream together sugar and butter. Add eggs and molasses, mix thoroughly. Add dry ingredients in four parts, mix batter thoroughly. Chill batter at least 4 hours. Scoop batter into small balls, roll in sugar, place on ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Makes about 6 dozen.
