BRUNCH CASSEROLE 
1 loaf sandwich bread
2-4 c. ham cubes (2 lb. = 4 c.)
3/4 lb. sharp Cheddar cheese (cubed or shredded)
4 eggs
2 tbsp. minced onion
2 c. milk
1/2 tsp. salt
1/4 tsp. dry mustard
1/4 c. melted butter

Remove crusts from bread and save. Butter bread slices and line bottom of 2 quart casserole (rectangular). Add ham cubes, cheese and onion. Cover with another layer of buttered bread slices. Beat 4 eggs; add milk and seasonings. Pour over bread mixture; let stand overnight in refrigerator.

Crush dry bread crusts - add 1/4 cup melted butter. Sprinkle over top of casserole just before baking. Bake 1 hour at 325 degrees. Serves 8-10.
