BROWN SUGAR COOKIES 
3/4 c. butter
1 c. plus 2 tbsp. firmly packed brown sugar
1 egg yolk
2 c. all-purpose flour
1 1/2 tsp. ground cinnamon
1/2 tsp. baking powder
1/4 tsp. salt
1 egg white
1 tbsp. water
Sugar

Cream butter. Add brown sugar gradually and continue creaming until light and fluffy. Blend in egg yolk and combined dry ingredients. Roll 1/8 inch thick on floured surface. Cut in desired shapes with cookie cutters. Place on ungreased cookie sheets.

Combine egg white and water; brush mixture over cookies. Sprinkle with sugar. Bake at 375 degrees for 10 to 12 minutes. Remove from cookie sheets at once. Yield: 7 dozen (2 1/2 inch) cookies or 2 1/2 dozen (3 1/2 inch) cookies.
