ZUCCHINI BREAD 
1 c. whole wheat flour
1 c. all purpose flour
1 1/2 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. sugar
3 egg whites
1/3 c. Puritan oil
1 1/2 tsp. vanilla
2 c. zucchini, shredded

Preheat oven to 350 degrees. Grease 9 x 5 x 3 inch loaf pan. Combine all dry ingredients except sugar. Beat egg whites until frothy; add sugar, oil and vanilla. Beat 3 minutes. Stir in zucchini. Add dry ingredients, mixing until just moistened. Bake 40 minutes or until toothpick inserted in center comes out clean. Cool on rack. Remove from pan after 10 minutes.
