1 c. coffee
1 c. raisins
1 c. brown sugar
2 eggs
2 tbsp. lard
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. nutmeg
1 tsp. mace
1 tsp. cloves

Boil coffee, raisins, sugar, and lard a few minutes. Add remaining ingredients and mix well. Bake in a buttered 9 inch loaf tin in a moderate 350 degree oven for 30 to 40 minutes or until a straw or cake tester inserted in the middle of the cake comes out clean. Makes 1 loaf cake. Ice with:

APPLE FROSTING:

1 c. white sugar
1 egg white
1 apple, grated fine
1 tsp. cinnamon

Put all ingredients in a quart bowl and beat 20 minutes. Yields about 1 cup.
