ELEPHANT EARS
1 1/2 c.milk
6 tbsp. shortening
2 pkgs. dry yeast
2 tbsp. sugar
1 tsp. salt
4 c. flour

Combine milk, sugar, salt and shortening; heat until shortening is melted. Do not boil. Cool to lukewarm. Add yeast and stir until dissolved. Stir in flour, two cups at a time. Beat after each addition until smooth. Put in a greased bowl, cover with a damp cloth and let rise until double, about 30 minutes. Dust hands with flour.

Pinch off pieces of dough, about the size of golf balls. Stretch each piece into a thin six to eight-inch circle. Fry one at a time in oil heated to 350 degrees, until dough rises to the surface. Turn and fry the other side until light brown. Drain on paper towel. Prepare sugar mixture; sprinkle generously over top.

SUGAR MIXTURE:

1/2 c. sugar
1 tsp. cinnamon

Mix and sprinkle over elephant ears.

This recipe is fantastic! They taste like "real thing". I just made them for the first time and they came out perfect. The kid who spent the night last night thinks I'm a goddess. My kids are thrilled, and don't see the point in spending $4 at the Saturday Market any more. I am thrilled because they tasted great, were easy to make, and made everyone very happy.
