COFFEE MOLASSES COOKIE 
3 3/4 c. flour
1 tsp. salt
1 tsp. ginger
1 c. butter
1 lg. egg
1/3 c. cold black coffee
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. allspice
1 c. granulated sugar
1 c. light molasses

Preheat oven to 350 degrees. Lightly grease cookie sheets. Mix flour, salt and spices and set aside. In large bowl beat butter and sugar with electric mixer until fluffy. Beat in egg, molasses and coffee (mixture will look curdled). With mixer on low speed, gradually add flour and beat until blended. Wrap and chill 1 hour or more until firm. Drop in small teaspoon size 2 inches apart. Bake 10 minutes or until light brown. Cool on cookie sheet 1 minute then remove to racks. Store tightly covered on layers of waxed paper.
