COFFEE NUT CRUNCH COOKIES 
1/2 c. soft butter
2/3 c. sugar
2 tbsp. freeze-dried coffee crystals
1 egg
1 c. flour
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. nuts (pecans best)

Cream butter and sugar. Add egg, continue beating. Then add (on slow) coffee crystals and vanilla. Then add salt, flour and nuts. Mix only a little. Drop by teaspoon size onto greased cookie sheets. Bake 350 degrees 12 minutes. Makes 36 - 2 1/2 inch cookies.
