EGG CUSTARD PIE 
Pastry for 9" pie
3 c. milk
6 eggs
1/2 c. sugar
1 tsp. vanilla
Pinch of salt
Grated nutmeg

Scald milk. Mix slightly beaten eggs, sugar, vanilla and salt. Stir milk gradually into egg mixture. Strain into pie shell. Bake at 450 degrees for 10 minutes. Reduce heat to 325 degrees and bake until knife inserted into center comes out clean. Cool and serve.
