PINEAPPLE CHEESE CASSEROLE 
2 (16 oz.) cans chunk pineapple, drained
1 1/2 c. sugar
3/4 c. all-purpose flour
2 c. grated Cheddar cheese (good with Velveeta)
1 stack Ritz crackers
1 1/2 stick butter

Preheat oven to 350 degrees. Spread pineapple in 2 quart casserole. Mix together sugar, flour and grated cheese. Add to casserole mixing into the pineapple. Crush crackers and spread over top of pineapple and cheese mixture. Melt butter and pour over crackers. Bake 30 minutes. Can be served hot or cold.
