LUAU PORK ROAST | |
5-6 lb. lean pork loin, boned and rolled 3 jars strained apricots (baby food!) 1/3 c. honey 1/4 c. fresh lemon juice 1 clove garlic, crushed 1 c. ginger ale 1/8 tsp. ginger 1 tbsp. grated lemon rind Combine marinade ingredients in glass or plastic container. Place meat in marinade, turning to coat completely. Marinate covered for at least 4 hours, turning occasionally. Remove meat from marinade and reserve marinade to baste roast during last hour of cooking time. Place roast on the cooking grids and cook about 2 1/2 hours to be well done (170 degrees). |
