MANHATTAN CLAM CHOWDER 
2 tbsp. butter
1 onion, chopped
1 green pepper, diced
2 stalks celery, diced
2 potatoes, diced
1 can (1 lb.) tomatoes
1 can (8 oz.) minced clams
Thyme, salt, & pepper

Melt butter in saucepan, add onion, green pepper and celery. Cook until onion is transparent. Meanwhile cook potatoes in water to cover for 5 minutes. Measure potato water and add boiling water to make 2 cups. Add potatoes and water to pan. Add tomatoes and liquid from clams, bring to boil and simmer 5 minutes. Season to taste with thyme, salt and pepper. Add clams, heat. Makes 4 servings.
