GINGER ORANGE CARROTS 
1 lb. fresh carrots
1/2 c. orange juice
1 tsp. grated orange rind
1 tbsp. vegetable oil butter
1 tbsp. sugar
1 tbsp. chopped crystallized ginger or 1/4 tsp. ground ginger
1/4 tsp. salt

Scrape or pare carrots with knife and cut into thin diagonal slices. Combine with remaining ingredients in saucepan. Cover and simmer for 20-25 minutes until just tender. Makes about 6 servings. Approximately 65 calories per serving.
