COUNTRYSIDE CHICKEN BAKE 
1 c. cooked rice
1 c. celery
2 tbsp. parsley flakes
2 tbsp. butter
1 sm. onion, chopped
Salt & pepper to taste
1 can baby carrots
Chicken breast fillets
1 can cream of mushroom soup
1/4 c. milk
2/3 c. mayonnaise

Cook rice; drain and mix first 6 ingredients together. Place in baking dish and put chicken pieces on top. Mix soup, mayonnaise and milk; spoon over top. Bake at 350 degrees for 45 minutes. Place carrots on top and bake 15 minutes more.
