FRESH RHUBARB COFFEE CAKE 
2 c. flour
1 1/2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
1/2 c. oil
2 eggs
1/4 c. milk
2 c. cubed rhubarb

You will need a greased 9 x 13-inch pan.

Blend together sugar, eggs, oil and milk. Add dry ingredients, then fruit. Pour into pan.

Bake 50 minutes in a 350°F oven. Sprinkle top with cinnamon sugar while still warm.

Rhubarb can easily be frozen in 2-cup packages, freshly chopped, to be used during the rest of the year.
