FRESH RHUBARB COFFEE CAKE 
2 c. flour
1 1/2 c. brown sugar
1 egg
1/2 c. shortening
1 tsp. salt
1 tsp. baking soda (baking)
1 tsp. vanilla
1 c. buttermilk
2 c. raw rhubarb, cut small

Mix dry ingredients flour, sugar, salt, soda. Add egg, buttermilk, vanilla then rhubarb. Pour in 9 x 13 greased and floured pan. Sprinkle top with 1/4 cup white sugar and 1 teaspoon cinnamon and then bake 35 to 40 minutes at 350 degrees.
