ZUCCHINI COOKIES | |
2 c. zucchini, shredded 4 c. all-purpose flour 2 tsp. baking powder 1 tsp. salt 1 1/2 c. (3 sticks) butter 2 eggs 2 tbsp. grated lemon peel 2 c. walnuts 1 1/2 c. sugar Cream sugar and butter until light and fluffy. Add eggs and lemon peel. Beat until smooth. Sift together flour, baking powder and salt. Add to sugar mixture. Add zucchini and nuts. Drop by teaspoonful on cookie sheet. Bake 15 minutes at 375°F. May frost with confectioners sugar drizzle frosting, but they are good just plain. |
